For the first time ever, Vietnam welcomed 13 international Michelin-starred chefs, bringing with them a total of 27 Michelin stars-an extraordinary convergence that elevated the country’s fine-dining and culinary landscape.

27 Michelin Stars Converge - A New Milestone for Vietnam’s Fine-Dining Scene

According to the organizers, 100 Flavors took place from 23 to 30 November 2025, gathering 13 chefs from France, Italy, Germany, Greece, and various other countries. These chefs - each holding one to three Michelin stars - represent diverse culinary philosophies across the global gastronomic landscape.

The appearance of such a large cohort of Michelin-starred chefs in Vietnam is regarded by industry experts as one of the most notable milestones for the country’s F&B sector this year. The event was co-organized by the international project Dinner Incredible, founded by Chef Giorgio Diana.

The lineup featured several renowned names holding three Michelin stars, including Jacob Jan Boerma, Thomas Bühner, Bruno Menard, Thierry Voisin, Stylianos Arakas, and Alvin Leung, alongside other distinguished 2-star and 1-star Michelin chefs from various countries. Their convergence in Vietnam represents a powerful commitment to excellence and the delivery of a world-class culinary experience.

In Ho Chi Minh City, on November 26, 2025, “The Ho Chi Minh City Symphony” unfolded at La Vela Saigon Hotel. Michelin-starred chefs introduced menus inspired by Vietnamese ingredients, executed with Michelin-level techniques and presentation standards. Each dish represented a dialogue between Vietnamese flavor profiles and the unique culinary philosophies of the participating chefs.

This performance offered compelling proof that Vietnamese cuisine - with its rich local ingredients - can be elevated to new heights through the craftsmanship of Michelin-starred chefs, creating a refined, contemporary dining experience that still honors its Vietnamese roots.

Hue – “Dạ Yến Hoàng Cung”: When Michelin Stars Meet Timeless Tradition

In Hue, the “Dạ Yến Hoàng Cung” unfolded in a setting inspired by the imperial court. This cultural showcase allowed Michelin-starred chefs to apply their refined culinary techniques to reinterpret traditional Vietnamese flavors in a modern, elevated way.

In this nostalgic, imperial setting, the chefs reinterpreted Vietnamese flavors in their own unique way: preserving the gentle, refined essence of Hue’s royal cuisine while applying haute cuisine techniques. It was a clear demonstration that Michelin standards are not limited to European gastronomy - they can also elevate and harmonize beautifully with Vietnam’s native culinary traditions.
